THE CHEESE COUNTER · CUT TO ORDER
The cheese counter is the heart of the deli. Everything is cut to order and priced by the hundred grams, with the names written by hand on the cards, Ribblesdale Blue Goats, a Comte Fort St Antoine, a local Blue Murder. Tell us what you are cooking or what you are pouring, and we will set you up.

In 2008 Nick and Wendy Shill opened Shill’s as a shop on Station Street, built around the food, wine and hospitality they loved. In 2013 they moved to the corner of South Street and opened the restaurant and wine bar above the deli. When they retired in 2023 they handed it to a local hospitality family, the Specks, and Nick stayed on choosing the wine. Two floors, one larder, the same town.

The corner of South Street still does what it has done since 2008, a deli, a cellar and a kitchen, run by people from the town.
The room upstairs does breakfast and bistro-style lunches through the week, with home-made cakes. Thursday to Saturday the kitchen turns to tapas and small plates in the evening, and on a Thursday there is live music from local players. Sunday is lunch, 12 to 3.
Tell us when you would like to come and how many, or ask about a hamper, a cheese for an occasion, or a wine for the table. We reply between shifts, usually within a working day.
Both. The ground floor is a full delicatessen and wine merchant, the cheese counter, charcuterie, oils, chocolates and wine, and the cafe and restaurant are upstairs. You can shop the deli without dining.
Thursday to Saturday the kitchen turns to tapas and small plates in the evening. Earlier in the week and on a Sunday lunchtime it is the daytime bistro menu. Live music comes in on a Thursday.
Yes. The online shop carries deli lines and wine for Click & Collect, including a six-for-five-percent offer on wine. Order ahead and pick it up on South Street.
We do. We will build a Cumbrian hamper from the deli shelves, the cheese, the oils, the chocolates and a bottle from the cellar, packed and ready to give.
The shop is open Tuesday to Saturday, 9:30am to 5pm. The restaurant runs Tuesday and Wednesday daytime, Thursday to Saturday into the evening, and Sunday lunch 12 to 3. Closed Mondays.
